We served this on top of the lemon salmon burgers, super tasty!
2 or 3 ripe mangos, peeled and diced
Juice and zest from 2 limes
1/2 red and green bell peppers, diced
1/2 small onion, finely diced
1 Tbsp. cilantro, if desired
1/2 jicama, peeled and diced
salt and pepper to taste
Toss all ingredients together. And voila! yummy!
