I finally made them for our Halloween trick or treat party. They were a total hit! I was worried that the crackers would become soggy after storing, but they stayed good for several days. (Well maybe that's not a plus since I polished off the pan. Hips don't need that).</i><br />
<br />
90 buttery rectangular crackers (such as Keebler Club Crackers)<br />
1 (14 oz.) can sweetened condensed milk<br />
1 c. brown sugar<br />
1/2 c. butter<br />
1/4 c. milk<br />
2 c. milk chocolate chips<br />
<br />
Line a 13X9 inch baking pan with foil, spray with cooking spray. Layer 30 of the crackers in a single layer on the bottom of the baking pan. <br />
<br />
In a 2 quart saucepan, mix the sweetened condensed milk, brown sugar, butter and milk; cook over medium heat until butter is melted, stirring frequently. Increase heat to medium high. Once caramel boils cook for 5 minutes, stirring constantly. <br />
<br />
Pour 1/3 of the caramel over the crackers in the pan. Layer 30 more crackers over the caramel. Repeat with remaining caramel and crackers. <br />
<br />
In a small microwave safe bowl, microwave chocolate chips for 1-2 minutes, stirring every 30 seconds until melted and smooth. Pour over caramel top, spread evenly. Refrigerate about 1 hour. Store covered for up to 4 days. All holidays were filled with her delicious pasta, bread, polenta, creamed spinach, and what we called 'bacon fat green beans'. They were fried in, you guess it: bacon fat (well the grease that is rendered from bacon fat, anyway). They were salty, a little crispy, and so, so, so delicious. She got sick and was unable to cook by the time I was old enough to start asking for her recipes. Unfortunately, I don't have many that are from her first hand. </i><br />
<i>At dinner group my friends served these green beans and they are so close to grandma's delicious bacon fat green beans that I make them fairly frequently. These are made using butter, but I think the next time I do these I'll use bacon grease and see if they match hers at all.</i><br />
<br />
4 Tbsp. butter<br />
4 cloves garlic, minced<br />
Dash of cayenne pepper<br />
1 1/4 lbs. fresh green beans<br />
Salt<br />
Pinch of sugar<br />
1/4 c. water<br />
chopped pecans<br />
French onions, optional<br />

In a large skillet, melt butter and toast garlic with a dash of cayenne pepper. Add green beans, season with salt and a pinch of sugar. Cook for 2 minutes. Add water, cover and cook for 6 minutes, stirring occasionally. Uncover and continue cooking until water evaporates. After water has evaporated, continue to fry the beans in the pan until they are slightly caramelized. Season with salt and pepper. Remove from heat, toss with chopped pecans and French onions if desired.<br />

I couldn't stop thinking about it, so I begged her for the recipe. I love to eat this in lettuce cups, or with chopped up lettuce in a pita pocket. It feels so light and refreshing.</i><br />

3 tsp. curry powder<br />
3/4 tsp. ground ginger<br />
1/4 c. soy sauce<br />
1 1/2 c. light mayonnaise<br />
<br />
3-4 skin on, bone in, chicken breasts<br />
turmeric to taste<br />
4 c. cooked brown rice<br />
2 c. raisins<br />
4 celery ribs, chopped<br />
2-3 green onions, sliced<br />
2 c. cashews or peanuts<br />
2 green apples, chopped<br />
<br />
Preheat oven to 375 degrees. Sprinkle turmeric over skin of chicken breast. Separate skin from meat and rub meat with additional turmeric. Roast chicken on foil lined baking sheet for 35-40 minutes or until no longer pink. Remove from oven, allow to cool, then remove meat from the bone and skin, shred into bite size pieces.<br />
<br />
Combine curry powder, ground ginger, soy sauce and mayonnaise.<br />
<br />
In a medium bowl stir cooked chicken, brown rice, raisins, celery, green onions, nuts, and green apples. Pour dressing over and stir all together. Refrigerate until chilled, then serve. <br />

In a bowl, combine the turkey, quinoa, onions, tomato paste, hot sauce, 2 Tbsp. Worcestershire sauce, egg, salt, and pepper; mix until well combined.</div>

Shape into a loaf and place on a foil lined baking sheet. Combine the 2 tsp. Worcestershire sauce, brown sugar and water; rub over the top of the meatloaf. </div>

I honestly didn't know that chicken was supposed to be a juicy until I started cooking for myself. Still, boneless, skinless chicken breasts have a tendency to dry out pretty quickly. I have been searching for ways to prevent this from happening. Turns out, brining is key. This recipe turns out moist, well seasoned chicken breasts every time. I bake up a few breasts, and keep it in the fridge for additions to salad, or for a quick bite of protein. </i><br />
<br />
4 boneless, skinless chicken breasts (pounded to an even thickness)<br />
1/4 c. kosher salt<br />
1 quart warm water<br />
1 Tbsp. melted butter or olive oil<br />
1 tsp. kosher salt<br />
1/2 tsp. black pepper<br />
1/2 tsp. garlic powder<br />
1/2 tsp. paprika<br />
<br />
Pour warm water and salt into a quart size resealable plastic bag. Place chicken into bag, place in to refrigerator, allow to brine for 15 minutes or up to six hours (the longer it brines, the saltier your chicken will be, so keep that in mind). <br />
<br />
Preheat oven to 450 degrees. Remove chicken from brine and pat dry. Place chicken in a single layer in a large baking dish. Brush both sides with melted butter or olive oil.<br />
<br />
In a separate bowl, combine the 1/2 tsp. salt, pepper, garlic powder, and paprika. Rub the mixture evenly over both sides of the chicken.<br />
<br />
Bake for 15-18 minutes, or until no longer pink in the center (should be 170 degrees in the thickest part of the chicken). <br />
<br />

I am not at a bean eater, in fact I avoid them when possible. My dear husband, however loves beans, and since our marriage has begged me to make foods with beans in them. I have found that in my levels of hatred for beans, white beans rank pretty high on the palatable scale. This recipe allows my husband to eat beans, and is mostly acceptable to me, I have been caught picking the beans out of my bowl, though (don't tell Adam).</i><br />
<br />
3-4 boneless, skinless chicken breasts, uncooked<br />
1 1/2 tsp. chili powder<br />
1 tsp. ground cumin<br />
1/2 tsp. onion powder<br />
1/2 tsp. garlic powder<br />
dash cayenne<br />
1 (14.5 oz.) can chicken broth<br />
1 (4.5 oz.) can chopped green chilies (undrained)<br />
1 (15 oz.) can corn, drained<br />
2 (15.5 oz.) can white beans, drained and rinsed well<br />
3 Tbsp. butter<br />
3 Tbsp. flour<br />
1 c. milk<br />
1 tsp. chicken base<br />
1/4 tsp. pepper<br />
1/2 tsp. seasoned salt<br />
1/2 c. sour cream<br />
<br />
Place chicken breasts in crockpot, sprinkle chili powder, cumin, onion powder, garlic powder, and cayenne over the chicken. Pour chicken broth, green chilies, corn and beans over chicken. Cook on low for 6-8 hours.<br />
<br />
An hour before serving: Remove chicken from crockpot and shred using two forks to pull the meat apart, set aside. Melt butter over medium-high heat in a small saucepan. When butter is melted, whisk in the flour, cook until flour is browned. Gradually whisk in milk and chicken base. Allow sauce to simmer for a few minutes, whisking frequently; add salt and pepper. Pour sauce into crockpot, stir to combine. Stir in the sour cream, add chicken back to pot. <br />
<br />
Continue to cook on low for an additional hour.<br />

This dessert was served at a Southern themed dinner. It was by far my favorite dessert served at a dinner group, and I'm not a huge banana fan. Something about the texture, the sweetness, just hit the spot. I am not sure where they got the recipe, but I knew I had to post it here so I don't lose it!</i><br />

1 (14 oz,) can sweetened condensed milk<br />
1 1/2 c. ice cold water<br />
1 (3.4 oz.) box instant banana pudding<br />
3 c. heavy cream<br />
1 (12 oz.) box Vanilla wafers<br />
4 c. sliced bananas<br />
<br />
In a small bowl, beat together the sweetened condensed milk and water with an electric mixer on medium speed, until well combined (about 1 minute). Add the pudding mix and beat well, about 2 minutes. Cover and refrigerate for 3-4 hours or overnight. <br />
<br />
In a large bowl, whip the heavy cream with an electric mixer on medium speed until still peaks form. Gently fold the pudding mixture into the whipped cream until well blended and no streaks of pudding remain.<br />
<br />
To assemble dessert: in a 4-5 quart capacity bowl, arrange one third of the vanilla wafers to cover the bottom of the bowl, overlapping if necessary, then one third of the bananas and one third of the pudding. Repeat layering twice more, garnishing with additional wafers of wafer crumbs on the top layer. Growing up the standard 'party' drink around my house was lemon-lime flavored soda with lime sherbet floating around in the punch bowl. While that recipe is tasty, it's nice to have other options available. This is a light and refreshing drink; bubbly, not too sweet and a pretty color to boot.</i><br />

1 (6 oz) can lemonade concentrate, defrosted (can use pink or yellow depending on what color punch you are aiming for)<br />
1 liter club soda, chilled<br />
2 (750 millimeter) bottles sparkling apple cider, chilled<br />
1 Tbsp. white sugar, optional (I didn't add the extra sugar, taste your punch beforehand to decide if you would like it sweeter)<br />
<br />
2 lemons, chilled<br />
3 large oranges, chilled<br />
2 trays ice (I made ice cubes with premade lemonade so it wouldn't dilute the punch. I read online that other people made ice cubes with maraschino cherries for added color. Other people sliced their citrus fruits and froze them instead of adding ice cubes.)<br />
<br />
1. Thinly slice the lemons and oranges and place in a large punch bowl. Pour in the thawed lemonade. Gently stir in the club soda and sparkling apple cider. Add sugar to taste. Stir in ice.<br />

Really <u style="font-weight: bold;">Creamed Corn?!</u> Creamed corn is slimy and sticky, and <u>gross.</u> </i><br />
<i>Not this creamed corn folks. If your experiences with creamed corn have always been with the stuff in the can, then of course you think that creamed corn is gross. My neighbor sent me this recipe that she swore would change my outlook on creamed corn. She was right. This is sweet, and corny, and creamy, and good. The cayenne pepper adds just a tiny bit of heat, and the use of butter and heavy cream make it rich and delicious. </i><br />
<i>I made this the first time for our Thanksgiving dinner and everyone liked it. It even reheated well. The next time I made it was for our annual Christmas party. With 26 people eating I had to get as much done early in the day as possible. I made the creamed corn in the early afternoon, put it in a slow cooker on the 'warm' setting and it stayed the right consistency for the party. </i><br />

2 (20 oz) pkg. frozen kernel corn (I use white corn, but yellow is fine)<br />
8 oz. (1/2 pint) heavy cream (whipping cream)<br />
8 oz. (1/2 pint) milk - I've used fat free and half-and-half on separate occasions, obviously, the half-and-half made the corn much creamier but the fat free milk was also very good, so feel free to use whatever percentage of fat milk you have on hand.<br />
1 tsp. salt<br />
pinch of white pepper or cayenne according to taste<br />
2 Tbsp. melted butter<br />
2 Tbsp. flour<br />
<br />
1. Combine all ingredients except the last two in a medium pot and bring to a boil. Simmer 5 minutes (if corn is frozen hard it will take longer). In a separate small bowl, blend the butter and flour; stir into the simmering corn, mix well until corn is thickened to your liking. Remove from heat.<br />

I know, I have a lot of 'favorite' foods, but honestly. I know I could eat the entire pan of these bars and be quite content with life. I know this because I, in fact, just about did that. When I made them for the first time I texted my neighbor to tell her I had a tasty treat to bring her and then never ended up taking her any. They all found their way into my happy stomach (over the period of a few days, not all in one sitting). I normally am a very generous person with my treats, but this one is special. Short bread is amazing. Very slightly salty short bread with a caramel apple pie filling and a cinnamony crumble topping? MAGICAL! Go ahead - share the pan - I dare you. Or not, just eat it. I'm not here to tell you how to live your life. </i><br />

3/4 c. butter at room temperature<br />

3 granny smith apples - peeled, cored, and chopped into 1/2 inch pieces, tossed in a squeeze of lemon juice to coat<br />

1/8 tsp. nutmeg<br />
dash salt<br />

1/2 c. reserved short bread dough<br />
1/4 c. + 1 Tbsp. flour<br />
1 Tbsp. brown sugar<br />
1/2 tsp. cinnamon<br />
1/4 tsp. nutmeg<br />
1/4 tsp. salt<br />

1. Preheat oven to 350. Line a 9X9" baking pan with parchment (I have skipped this and just sprayed the pan with cooking spray, worked just as well).<br />
2. Cream together the 3/4 c. butter and 1/2 c. sugar until smooth. Add vanilla and egg yolk. Mix well. Add the 1 1/2 c. flour and 1/4 tsp. salt just until combined, do not overmix. Reserve 1/2 c. of the dough for the crumble topping. Press remaining dough into the prepared pan, press as flat as possible. Bake 16-22 minutes until the edges are just starting to brown. Remove pan from oven and set aside.<br />
3. Over low heat, melt butter in a medium saucepan. In a medium bowl combine the brown sugar, 1 1/2 tsp. flour, 1/2 tsp. cinnamon 1/8 tsp. nutmeg and dash of salt. Toss the apples in this mixture to coat. Add all to melted butter in the pan. Increase the heat to medium; stir 3 minutes until this mixture simmers. Continue simmering an additional 4 minutes, until the sauce thickens.<br />
4. Add reserved dough back to the mixing bowl. Add 1/4 c. + 1 Tbsp. flour, 1 Tbsp. brown sugar, 1/2 tsp. cinnamon, 1/4 tsp. nutmeg, and 1/4 tsp. salt. Mix until crumbs formed. <br />
5. Pour apples over the base crust, spread to the edges of the pan. Sprinkle with the crumb topping. Bake 32-27 minutes until the topping is a light-medium brown. A rage that I whole heartedly embrace. This recipe is not at all for the diet minded. It uses and entire POUND of butter. Whatever, I don't care. I will eat it anyway.</i><br />

4 sticks (1 lbs.) butter, at room temperature<br />
1 c. sugar<br />
1 1/2 c. powdered sugar<br />
2 Tbsp. vanilla<br />
4 c. flour<br />
14 oz. bag caramels, unwrapped<br />
1/3 c. heavy whipping cream<br />
1/2 tsp. vanilla<br />
1 Tbsp. coarse sea salt<br />
<br />
1. Preheat oven to 325. Spray a 9X13" baking dish with cooking spray.<br />
2. In a large bowl combine the butter and sugars with an electric mixer. Beat until creamy. Add vanilla and beat until combined. Sift the flour into the butter & beat until dough forms.<br />
3. Press half of the dough evenly onto the bottom of the prepared baking dish. Refrigerate the other half of the dough. Bake the bottom crust for 20 minutes until firm and the edges are a pale golden brown. Remove from the oven and cool for 15 minutes.<br />
4. Place the caramels and the cream in a microwave safe bowl. Microwave on HIGH for 1 minute. Remove from microwave and stir. If the caramels aren't melted, return to microwave and heat at 30 second intervals, stirring between each heating until caramels melt.<br />
5. Pour caramel over slightly cooled bottom crust. Sprinkle with coarse salt. Crumble the remaining dough over the top of the caramel. Bake 25-30 until filling is bubbly and the crumble topping is lightly golden brown. Cool completely before serving.<br />

It is one of favorite comfort foods. It's so basic and family pleasing and, for me, a quick go to when I run out of ideas for what to make for dinner. Occasionally ground turkey is less expensive than beef and in a few dishes it is pretty interchangeable. I happened to have the hankering for meatloaf, but no ground beef, instead there were a few pounds of ground turkey in the freezer. I found this recipe and have to say it was quite successful. My kids were not crazy about the sweet 'glaze' that is on top, but I likes how it make it almost teriyaki-like. </i><br />

1/4 c. quinoa - well rinsed<br />
1/2 c. water<br />
1 tsp. olive oil<br />
1 small onion, chopped<br />
1 garlic clove, minced<br />
20 oz. ground turkey<br />
1 Tbsp. tomato paste<br />
1 Tbsp. hot pepper sauce<br />
2 Tbsp. Worcestershire sauce<br />
1 egg<br />
1 tsp. black pepper<br />
2 Tbsp. brown sugar<br />

1. Bring quinoa and 1/2 water to a boil. Reduce heat to low and simmer until the quinoa is tender and the water has been absorbed, 15-20. Set aside to cool.<br />
2. Preheat oven to 350. Heat olive oil in a skillet over medium heat. Cook onions until soft, about 5 minutes; add garlic and cook 1 minute more. Remove from pan to cool.<br />
3. Stir the turkey, quinoa, onions, tomato paste, pepper sauce, 2 Tbsp. Worcestershire sauce, egg and salt and pepper.<br />
4. Shape into a loaf and place on a foil lined baking sheet. In a small bowl combine the brown sugar, 2 tsp. Worcestershire sauce and 1 tsp. water. Rub over the top of the meat. <br />
5. Bake about 50 minutes until no longer pink in the center, and an instant read thermometer registers 160. Add the garlic, onions, oregano and pepper flakes. Cook stirring frequently until onions are cooked. Stir in the tomato paste for 1 minute until combined. </div>

3. Stir in the stock, tomatoes zucchini, and bay leaves. Bring to a boil, reduce heat and simmer 30 minutes. Stir in pasta. Remove bay leaves. Serve immediately with a heaping spoonful of the ricotta mixture. Sprinkle with mozzarella and basil.</div>

Fall means I'd better step up my work out if I plan to eat things as gooey and sweet and satisfying as this. And I will be eating things just like this, many, many times this Fall.</i><br />
<br />
7 small to medium baking apples, such as granny smith, peeled, cored, and cut into 16 slices each (I used 3 medium and 4 large and I think it was too many)<br />
3 c. flour<br />
1 tsp. baking soda<br />
1 1/2 tsp. cinnamon<br />
1 tsp. salt<br />
1/2 tsp. nutmeg<br />
3 eggs<br />
1 1/2 c. vegetable oil<br />
1 c. brown sugar<br />
1 c. sugar<br />
2 1/2 tsp. vanilla<br />
1/4 c. chopped pecans<br />

6 Tbsp. butter<br />
1/3 c. dark brown sugar<br />
1/3 c. light brown sugar<br />
1/2 c. heavy whipping cream<br />

1. Preheat oven to 325. Butter and flour a 9X13" baking dish.<br />
2. In a medium bowl stir together the flour, cinnamon, nutmeg, baking soda and salt. In a large bowl combine the eggs, sugars, oil and vanilla. <br />
3. Gradually add the dry ingredients to the wet. Fold in the apples and the pecans just until coated (the batter will be very thick). <br />
4. Spread batter into prepared baking pan. Bake for 50-60 minutes or until toothpick inserted in the center comes out clean. Remove from oven and allow to cool for 30 minutes. <br />
5. While cake is cooling prepared the caramel glaze: Over medium heat melt the butter in a medium saucepan. Stir in the sugars, cream and a pinch of salt. Lower the heat to medium-low; cook and stir until blended for about 2 minutes. Increase the heat back to medium and boil the caramel 2 more minutes stirring constantly. Remove from the heat and allow to cool slightly. Drizzle over cake.<br />

1 1/2 lbs trimmed tri-tip roast<br />

2 Tbsp. olive oil<br />
1 large, thinly sliced red onion<br />

2 bunches green onions, thinly sliced<br />
3/4 c. balsamic vinegar<br />

1. Prepare the onion marmalade: Heat the oil in a large nonstick skillet over medium heat. Add the red and yellow onions; cook and stir about 5 minutes then add the green onions. Cook and stir an additional 3 -5 minutes, until tender and beginning to brown. Reduce heat to low; cook 12 minutes or until onions are caramelized, stirring occasionally. (This is a good point to start preheating your grill.) Increase eat to medium-high, stir in vinegar, cook 4 minutes or until reduced by half. Stir in the sugar; season with salt and pepper. Reduce heat to low; cook 5 minutes or until liquid has evaporated and mixture thickens. Remove from heat and keep warm.<br />
2. Generously season the meat with the seasoning rubbing it well in to all sides of the roast. Place meat on grill over medium ash covered coals (I am not a great griller so I can't give any better instructions than what I found in the original recipe) or use medium heat on a gas grill. Place skinny end of meat over a lower heat level as it will cook much quicker than the thick end. Grill for 25-350 minutes, flipping the meat occasionally to prevent over cooking, until instant read thermometer inserted in the thickest part of the roast registers 140 for medium-rare. Remove from heat an let stand 10 minutes (meat will continue to cook, increasing around 5-10 degrees in temperature).<br />
3. After the meat has rested, slice across the grain and serve with the onions.<br />

1. Preheat oven to 350. In a large bowl, combine the flour, baking soda, baking powder and salt. Set aside.<br />
2. In a separate large bowl, beat the butter and peanut butter until fluffy. Add sugars until well combined. Add the egg, milk and vanilla. Add dry ingredients; mix well but not too much. Stir in the peanut butter and chocolate chips. <br />
3. Scoop the dough into rounded teaspoons. Lightly roll the dough balls in the sprinkling sugar, place dough on ungreased cookie sheets with a minimum 2" space between balls. Use the back of a fork to lightly indent the dough into a criss-cross pattern.<br />
4. Bake for 10-12 minutes. They may appear underdone - DO NOT OVERBAKE. 2 lbs. tri-tip beef roast cut into 1" cubes<br />
1 medium onion, diced<br />

2 bay leaves<br />

1. Preheat your oven to 300 degrees. In an oven proof pan with an oven proof lid heat the oil over medium high heat. Saute the onion for about 3 minutes. Stir in the garlic. Season meat with salt and pepper; brown the meat on all sides. Pour the beef stock and water over the meat. Sprinkle with thyme and add the bay leaves. Cover the dish and place in the oven for 2-3 hours.<br />
2. When the meat is incredibly tender, remove the pan from the oven. Remove the bay leaves and transfer the meat to separate dish and set aside while you make the gravy. Mix the softened butter and the flour into a thick paste; whisk this mixture into the liquid in the pan until you get your desired gravy consistency; you may need to add a small amount of water if it's too thick. Return the meat to the pan and stir to coat the meat. <br />
3. Serve over mashed potatoes.<br />

Basically it's cookies that have been mashed up and make into a peanut butter consistency sort of spread (great descriptions are not my forte), you can get it in either crunchy or smooth. I've purchased mine at Target and have seen it available at the other grocery stores I shop. Trader Joe's also has a product which is very similar called cookie butter that they make with the specaloos cookies, which, to me, is better than Biscoff since it's a little on the ginger snappy side. Either product you use for the frosting of these brownies is a good choice, peanut butter or nutella would also be amazing. The brownies are thick and as their name implies very fudgy. They keep well in the refrigerator but the full flavor is in effect at room temperature. I can remember when I was growing up my mom would make bread and give each of the six kids a small amount of dough to make their own loaf. We each got a small loaf pan and we were responsible for shaping it and making sure that it was put in a warm place, then we were in charge of checking it when it was done rising. We would put our loaf pans on the hearth around our big black pot-belly stove in the family room. I love that memory. I found this recipe <a href="http://www.getoffyourbuttandbake.com/2009/10/hot-buttery-scones-my-favorite-white.html">here </a> it makes 4 loaves plus a little extra for fry-bread or as the author of the blog calls them 'scones'. I halve the recipe and it makes 2 large loaves and 1 small loaf, which is just the right amount for my family, sometimes if I'm feeling generous I will give the small loaf to one of my neighbors.</i><br />
<i>When mine are finished baking I like to take a stick of butter and rub it on the tops of the bread, no need to melt the butter, just take the whole stick and go to town! (You aren't going to rub the entire stick of butter on to the top - although who am I to tell you how to live your life - just enough to give the tops a nice buttery glow.)</i><br />

2. In the bowl of a stand mixer combine the 2 c. water, powdered milk, salt, oil, eggs, 1/4 c. sugar and 3 1/2 c. flour. Mix together for 3 minutes on medium speed.<br />
3. Add the yeast mixture and the remaining 4 c. flour. Knead for 5 minutes in the mixer or my hand for 10 minutes until you have a smooth and elastic dough. <br />
4. Transfer to a greased bowl (turn dough to coat all sides), cover and allow to rise in a warm spot for 1 hour or until double in bulk.<br />
5. After the dough has doubled punch it down and shape into loafs. Place in greased loaf pans, cover and allow to rise for an additional hour.<br />
6. Preheat oven to 400. Bake for 10 minutes then lower the oven to 350. Bake and additional 15-20 minutes. Allow to cool in the pan for 5 minutes then turn out onto cooling racks.<br />

I found it on Pinterest on the blog <a href="http://sugarandspice-celeste.blogspot.com/2008/12/absolutely-sinful-cinnamon-rolls.html">http://sugarandspice-celeste.blogspot.com/2008/12/absolutely-sinful-cinnamon-rolls.html</a> who copied the recipe from Pioneer Woman. I have to say these really are Uh-May-Zing. I didn't do them overnight I baked them the same day I made them. I do, however, plan to use that little trick in the future. I also will at some point freeze the cinnamon rolls to use at a later date and if I have any negative feedback with either of these methods, I will note them in an appendage to this post. I didn't use the coffee flavored glaze that PW and S&S use on their rolls, instead I used a cream cheese frosting recipe I found on Epicurius, it was really, really perfect. In both the PW and the S&S recipes it calls for 1 c. white sugar, I opted for 1/2 cup white and 1/2 cup brown sugar because I like the caramely flavor the brown sugar provides.. Several reviewers on Sugar and Spice said that their dough was very wet; mine was not. It was a bit on the stiff side, but in the end it didn't matter. The rolls turned out perfectly: gooey where they need to be, crusty where they need to be, and delicious where they need to me: in my mouth. I ate 4 in as many days and do not at all regret my decision. I honestly don't think I will ever use another cinnamon roll recipe. I did use a little trick I kind of made up for the rising time: I preheated my oven to warm (in my oven that is 175) and put my pizza stone in it while it preheated. After it was done, I took the pizza stone out of the oven, put it in the microwave and put the bowl with the dough that needed to rise on top of the pizza stone, closed the microwave door, and let the warmth do it's work: like a charm, the dough rose just the right amount. </i><br />

1/2 tsp. baking soda<br />
1/2 Tbsp. salt<br />

1 c. melted butter, plus more as needed<br />
1/8 c. ground cinnamon<br />
1/2 c. white sugar<br />
1/2 c. brown sugar <br />

4 oz. cream cheese, softened<br />
1 c. powdered sugar<br />
1/4 c. butter, at room temperature<br />
1/2 tsp. vanilla extract<br />

1. Mix milk, vegetable oil, and 1/2 c. white sugar in a pan. Scald the milk (heat until just before the boiling point). Remove from the heat and let cool 45 minutes to 1 hour.<br />
2. When the mixture is lukewarm to warm, but NOT hot, sprinkle in the yeast. Let this sit for a minute then add 4 c. of the flour. Stir mixture together. Cover and let rise for at least 1 hour.<br />
3. Next, add 1/2 c. flour, the baking powder, baking soda, and salt. Stir mixture together. From here, you could cover the dough and put it in the fridge until you need it, overnight or even a day or tow, if necessary. Just keep your eye on it and if it starts to rise out of the pan, just punch it down. Or continue to make the rolls:<br />
4. Sprinkle work surface generously with flour and roll the dough into a thin rectangle shape, about 1/4" thick. Brush melted butter on top, then sprinkle sugar over the butter, and finish with a generous sprinkling for cinnamon.<br />
5. Starting with the wide end, roll the dough tightly towards you in a neat line. Next, pinch the seam to the roll to seal it. Spread 1 Tbsp. melted butter in each pan/dish (I got enough rolls to fill one 9" round cake pan and one 6" round cake pan, the original recipe says it will make 3-4 pans, I'm not sure how that would happen, but that's what they say) . With a sharp knife (or with dental floss) begin cutting the dough into 1 inch slices. Lay them in your pans. Let rise for 20-30 minutes. Bake at 375 for 13-17 minutes, or until golden brown.<br />
6. While rolls are baking: with your electric hand mixer, whisk together all of the frosting ingredients until smooth. Slather over the top of the rolls after they have cooled for about 10 minutes. <br />

IF MAKING AHEAD FOR LATER USE: Instead of putting directly into the oven, put the assembled rolls into the fridge and let them rise for their 2nd rising (the step right before you bake them) in the refrigerator overnight. Then in the morning let them sit at room temperature for about 30 minutes, then bake them as directed. If you plan to freeze the rolls, place the pan of prepared rolls in the freezer. On the day you plan to bake them.
